Apple Crumble Bars

This summer we had the most amazing apples from our trees in the back garden and I was so excited to get in the kitchen and let my creative juices flow!

I LOVE apple crumble but fancied something a tiny bit sweeter and ta da!….Apple Crumble Cookie Bars were created. These are so perfect for this time of year - I loved them straight out of the oven and warmed up before serving…a scoop of ice cream on the side would be even more perfect 👌🏼😻

If you have any left over Apple Spiced Caramel then I highly recommend drizzling some over porridge, oats, yogurt or adding it to your smoothies or even dipping freshly cut apple slices into it 😋 … delicious!

INGREDIENTS:

FOR THE APPLE PURÉE:

  • 3 Cups chopped apple
  • 1 Cup water
  • 1tsp Cinnamon
  • 1/4tsp Nutmeg

Simmer all ingredients together until soft and then blend into a smooth paste. (Alternatively you can use apple sauce and add in the spices)

FOR THE APPLE SPICED CARAMEL:

  • 1 Cup apple purée
  • 1/2 Cup pitted dates
  • 1/4 Cup almond butter
  • 1tsp Vanilla extract

Blend until smooth.

FOR THE COOKIE BASE:

  • 1 Cup plain flour
  • 1 Cup self-raising flour
  • 1/2 Cup apple purée
  • 1/2 Cup pitted dates
  • 1/3 Cup milk
  • 1/2 Cup maple syrup
  • 1tbsp Olive oil
  • 1tsp Vanilla extract
  • 1 Egg

Blend all the wet ingredients together until smooth apart from the egg. Sift in the flours and add in the whisked egg until combined and smooth.

FOR THE CRUMBLE:

  • 2 Cups oats
  • 1/2 Cup of the Apple Spiced Caramel
  • 1/3 Cup maple syrup

TO MAKE IT:

  1. Pre-heat the oven to 180 degrees Celsius (160 fan assisted) and line a baking tray with grease proof paper.
  2. Smooth in the cookie base into the bottom of the tin.
  3. Add the crumble mixture over the top and finally add the caramel over the top of that. (The caramel does make a lot so you might have some left over!)
  4. Bake for 30 mins, leave to cool and then cut into 12 bars.
