Banana Chia Seed Muffins

Who doesn’t love bananas?!
I seriously could find a hundred ways to use them in my baking and cooking!
These are super delicious, soft and fluffy on the inside and packed full of nourishing ingredients that make them the perfect snack or brekkie!

Banana Chia Muffins

MAKES 8

INGREDIENTS:

  • 2 Ripe Bananas
  • 100g Ground Oats
  • 2 Eggs
  • 120ml Milk (I used cows milk but you could use any substitute)
  • 60ml Maple Syrup (can skip this if you wanted to)
  • 2tbsp Chia Seeds
  • 1tsp Baking Powder
  • 1tsp Vanilla Extract

METHOD:

  1. Pre-heat the oven to 180 degrees Celsius (160 fan assisted).
  2. Mash the bananas and whisk through the eggs, milk and maple syrup.
  3. Stir through the oats, baking powder, vanilla and chia seeds until fully combined and pour the mixture into 8 cupcake cakes or moulds.
  4. Bake for 30-35 minutes until cooked through (a toothpick should come out clean when inserted in the middle).
