A few days ago I realised that I had a few bananas that were over-ripe and rather than creating more banana bread (it's honestly been a weekly recipe in our household!), I decided to make something that was 'baby-friendly' so Koa could enjoy it too!

Ta-da! 3 Ingredient Banana Flapjack Bites were created!

The best thing is, even though these are great for little bubbas, they're also fab for us adults (and kiddies too!). They're so quick and easy to make - I even managed to make them twice with a baby attached to my hip both times!

Banana Flapjack Bites 1

ingredients:

  • 2 Ripe Bananas
  • 200g Oats
  • 1 Egg

method:

  1. Mash the bananas together, whisk in the egg and then stir through the oats! It's that simple!
  2. Divide the mixture between 10 silicone cupcake cases and bake in the oven at 180 degrees Celsius fan(Pre-heated) for 20 minutes.
  3. Alternatively you could pour the mixture into a baking tray, bake and once cooled chop into little bite sized bars.
