Blueberry Apricot Breakfast Slice

I am OBSESSED with blueberries and LOVE getting creative in the kitchen - I'd add them into everything if I could!

These blueberry and apricot slices are perfect for breakfast or even as a snack on the go! Plus, Koa absolutely loved them too so are great for weaning babies.

MAKES 12

Ingredients:

  • 150g Blueberries
  • 60g Dried Apricots
  • 75g Bran Sticks
  • 75g Oats
  • 300ml Almond Milk
  • 15g Chia Seeds
  • 3tbsp Maple Syrup
  • 1 Egg
  • 75g Plain Flour
  • 1tsp Baking Powder
  • 1tsp Cinnamon
Blueberry Apricot Slice

method:

  1. Pre-heat your oven to 180 degrees Celsius (160 fan) and line a baking tin with grease proof paper.
  2. Finely chop the dried apricots and add them to a saucepan with the fresh blueberries. Simmer them on a low heat for 10-15 minutes until softened and reduced.
  3. Meanwhile, add the bran sticks, oats, chia seeds and almond milk to a large mixing bowl. Stir thoroughly and allow it to soak for 10 minutes.
  4. After the almond milk has soaked in, stir through the egg, maple syrup, plain flour, baking powder and cinnamon.
  5. Pour the mixture into the baking tin.
  6. Spoon the berries over the top and use the back of the spoon to create a ripple effect through the batter.
  7. Bake in the centre of the oven for 25 minutes until golden on top and cooked through.
