Broccoli bread...say what?!

Ok....so it’s no secret...I may be a tad broccoli obsessed but I promise you, this is a GOOD one!

This is packed full of beautiful, amazing nutrients but it’s also totally delicious, makes a perfect snack and full of healthy fats, nourishing protein and energy boosting vitamins...have I sold you yet?

I mean...I ate half the loaf in one go ... whoops...

Broccoli Bread

INGREDIENTS:

  • 200g Raw Broccoli Florets
  • 50g Plain Flour
  • 2 Egg Whites
  • 1 Spring Onion
  • 2tbsp Extra Virgin Olive Oil
  • 1tbsp Tahini
  • 1tsp Onion Granules
  • 1tsp Garlic Powder
  • 1tsp Dried Oregano
  • 1/2tsp Bicarbonate of Soda

METHOD:

  1. Preheat the oven to 190 degrees Celsius (170 fan assisted) and like a small loaf tin with baking paper.
  2. Place the broccoli in a food processor and blend until fine.
  3. Add to a mixing bowl with the rest of the ingredients.
  4. Finely chop the spring onion (discarding the white stalk) and add it to the mixture.
  5. Pour into the loaf tin and bake for 30 minutes until firm and cooked through.
