These fritters not only make a perfect snack, but they're also a great breakfast/brunch option and wonderful for weaning babies too!

I'm not going to lie...I totally made these for Koa as I'm trying to introduce him to more vegetables and savoury flavours (he's currently fruit obsessed! Just like his mama! We call him our 'little fruit bat') BUT I ended up eating pretty much all of them - sorry Koa!

They are so delicious, packed full of nutrients and make a wonderful meal in their own right which is always a fantastic bonus!

Broccoli Cauliflower Fritters

MAKES 6

Ingredients

  • 1 cup steamed broccoli
  • 1 cup steamed cauliflower
  • 2 eggs
  • 1tbsp yogurt
  • 1tbsp grated cheese
  • 1tbsp plain flour
  • 1tsp garlic powder
  • 1tsp onion powder
  • (Add a little salt if not being fed to bubbas)

method:

  1. Mash the broccoli and cauliflower with the back of a fork and whisk through the rest of the ingredients to make a batter.
  2. Pre-heat a pan and spoon the mixture in, 1tbsp at a time to create the fritters.
  3. Fry for 3-5 minutes on each side until golden brown - should make about 6.
  4. Store in an air-right container for 3 days in the fridge.
