Want something sweet, chocolate and super YUM for breakfast??

I’m more of a ‘sweet’ breakfast person and don’t need much of an excuse to bake something chocolatey...need I say anymore?

These can easily be made gluten free (using gluten free flour), they are dairy free and you can even make them vegan by swapping the egg for 60ml of vegan yogurt!

Delicious and super nutritious breakfast bars here we come!

Carrot Cake Breakfast Bars1

MAKES 8

INGREDIENTS:

  • 100g Oats
  • 75g Raisins
  • 50g Plain Flour
  • 2 Carrots
  • 1 Egg
  • 1tbsp Cocoa Powder
  • 60ml Maple Syrup
  • Zest and Juice of 1 Orange
  • 1tsp Vanilla Extract
  • 1/2tsp Bicarbonate of Soda

METHOD:

  1. Pre-heat the oven to 200 degrees Celsius (180 fan assisted) and lime a baking tin with baking paper.
  2. Grate the carrots into a mixing bowl and add in the oats, flour, bicarbonate of soda and cocoa powder.
  3. Mix through the egg, orange juice and zest, vanilla extract and the maple syrup.
  4. Stir through the raisins and then pour the mixture into the baking tray.
  5. Bake for 25 minutes, allow to cool and then cut into 8 bars. Store in an air-tight container for up to 4 days.
