Chocolate Peanut Butter Bread 2

When I was at uni, my beautiful friend Lisa came round and we found an epic peanut butter bread recipe on Pinterest. Being the peanut butter fans we are that loaf of bread went down within one night! It was THAT good. Last week I had a craving for that peanut butter bread but couldn't find the recipe again! It wasn't 'clean' and it certainly wasn't 'low sugar' or even remotely healthy, but it was delicious. So I decided to create a clean chocolate version of that peanut butter bread - and let me tell you, it's divine! If you love peanut butter & chocolate then this is the recipe for you!

It's gluten free, dairy free and there is an option to make it vegan too!

Store it in an air tight container for up to 3 days or you can slice it up and put it in the freezer. It's a great go-to snack, great for on the go and a good breakfast option too!

Top Tips:

  • Check the ingredients list on the peanut butter and make sure that there are no hidden nasties such as sugar, palm oil or any other preservatives and additives. Ideally it should be made 100% from peanuts.
  • For a vegan option, replace the eggs with two flax eggs (mix 2 tbsp flax seeds with 6 tbsp water and leave to one side until it forms a gel like consistency).
Chocolate Peanut Butter Bread 1

Ingredients

  • 200g buckwheat flour
  • 100g almond meal
  • 1 tsp ground pink himalayan sea salt
  • 30g raw cacao powder
  • 1/2 cup peanut butter
  • 3 tsp baking powder
  • 2 tbsp stevia
  • 2 eggs
  • 3 tbsp grade B pure maple syrup
  • 1 tsp vanilla essence
  • 1 tbsp apple cider vinegar
  • 1 cup almond milk

method

  1. Preheat oven to 180 degrees celsius (160 fan) and line a bread tin with grease proof paper.
  2. Mix the buckwheat flour, almond meal, salt and cacao powder together then add in the peanut butter and mix until it resembles a breadcrumb-like consistency.
  3. Add in the baking powder & stevia.
  4. whisk the eggs together and add into the dry mixture.
  5. In a separate bowl, stir together the maple syrup, vanilla essence, apple cider vinegar and almond milk then combine it with the mixture.
  6. Pour the mixture into the baking tray and bake in the centre of the oven for 50-55 minutes. To check if it's done, insert a toothpick into the loaf and check that it comes out clean. Tap the sides of the loaf to check if it sounds hollow.
