Rocky Road

I’m a huge chocolate fiend and for those of you who know me, you know I have such a sweet tooth! Over the last few months I've made a conscious effort to add even more goodness into my diet, which has meant that I've worked on creating recipes that satisfy my sweet tooth as well as boosting the nutrient profile of my overall diet.

The other day I really fancied Rocky Road bars and thought - yea! Why not make these yummy treats into something more energy boosting that will help not only fuel our bodies but will hit that sweet spot and leave us feeling satisfied?

Well these do just that!

They are packed full of nuts & dried fruit - the perfect combo of healthy fats and fibre to keep us feeling fuller for longer as well as adding more micronutrients and phytochemicals into your diet to help support your body’s optimal functioning.

Brain food, energy food, yummy food - amazing combo right? Super easy to make and super delicious! I stored these in the freezer and just let them defrost naturally for 10 mins or so before eating. Hope you enjoy them as much as I do. 😋🍫🥜

(Ps. If you want to make this recipe gluten-free make sure the oats specify they are gluten-free and this recipe can also be made dairy free by substituting the milk for a dairy-free alternative)

Energy Boosting Rocky Road

INGREDIENTS:

  • 40g Ground Oats
  • 100g Pitted Dates
  • 240ml Milk
  • 180ml Maple Syrup
  • 50g Raisins
  • 30g Pecans
  • 30g Coconut Flour
  • 20g Puffed Rice
  • 2tbsp Raw Cacao Powder
  • 1tbsp Almond Butter
  • 1tsp Vanilla Essence

METHOD:

  1. Mix the oats and 140ml of milk and set to one side.
  2. Blend the dates, almond butter, milk and maple syrup together until smooth.
  3. Stir through the oats and the rest of the ingredients.
  4. Press the mixture into a freezer-safe baking tin (place grease-proof paper on the inside so it’s easier to remove the rocky road once it’s set).
  5. Leave to set for 20-30 minutes and then cut into bars.
