Gooey Chocolate Protein Brownies

I often find myself craving chocolate and when I do I picture a gooey, soft, melt-in-your-mouth brownie! So this week that's exactly what I made! They are so delicious that they hardly lasted a couple of days. Plus, they're low calorie too, so perfect if you're watching your macros, on a reduced-calorie diet or are simply being a little more health conscious.

*They're also gluten-free, refined sugar free and can be made dairy free too!

Gooey Choc Protein Brownies

ingredients:

  • 300g Sweet potato (Peel, chop into 1 inch sized cubes and bake in a 180^C fan oven for 30mins)
  • 150g Greek yogurt
  • 60ml Milk of choice
  • 50g Choc protein powder (I used the @happyway mint chocolate protein powder)
  • 30g Cacao nibs
  • 20g Cacao powder
  • 3 Large dates
  • 1tsp Baking powder

Method:

  1. Preheat the oven to 160^C fan assisted.
  2. Blend the cooked sweet potato and dates in a food processor until smooth.
  3. Add in the yogurt & milk and once blended, transfer to a mixing bowl.
  4. Stir through the rest of the ingredients and mix throughly.
  5. Pour the mixture into a baking tin and bake in the centre of the oven for 40 mins.
  6. Once cooled, cut into 9 pieces.
