What says Easter more than a Hot Cross Bun?

I love enjoying these around Easter - the spices, the dried fruit and sweetness just send my taste buds soaring!

I wanted to make a batch of hot cross buns that were slightly healthier to make the perfect clean treat for Easter time - enjoy!

Healthy Hot Cross Buns

INGREDIENTS:

  • 100g Greek yogurt
  • 100g Milk of choice
  • 225g Spelt Flour
  • 90g Dried fruit (I used dried cranberries and raisins)
  • 3tsp Stevia
  • 2tsp cinnamon
  • 1tsp ground allspice
  • 1/4 tsp nutmeg
  • 1 x 7g sachet of yeast

GLAZE:

  • Juice 1/2 orange
  • 1 tsp maple syrup

*(3 tsp of flour and 3tsp cold water for the crosses)

method

  1. Preheat the oven to 160^C fan assisted.
  2. Mix the yogurt, stevia and milk together and then add in the yeast. Sift in the flour and spices.
  3. Mix until it forms a dough and knead it on a lightly floured surface for 5 minutes. Transfer it to a lightly oiled bowl and cover with a tea towel for 1 1/2 hours until it doubles in size.
  4. Knead it for a further 5 minutes and separate into 6 equal pieces. Form balls and place on a baking tray lined with parchment paper. Cover with the tea towel and leave for a further 30 minutes.
  5. Glaze the buns by mixing the orange juice and maple syrup together and brushing over the tops of the buns
  6. To make the crosses, mix the flour and water together and pipe it into crosses on top of the buns.
  7. Bake in the centre of the oven for 15-20 minutes.
