These mini brownie bites are so chocolatey, indulgent and delicious PLUS they're dairy free, soy free, refined sugar free and egg free too!

I had some during making dinner last night to experiment in the kitchen and wanted to come up with a 'baby/toddler friendly' dessert as a few of my mum friends were coming round the following day. I wanted to have something not only to offer and serve them but all their bubbas too!

That was why it was important to me not only to avoid refined cane sugar, but also to add in the extra fruit where I could! Trust me, these are so delicious that they rapidly went from being a 'baby' treat to a 'mummy' treat!

Mini Gooey Brownie Bites

Ingredients:

  • 2 Pink Lady Apples
  • 150g Plain Flour
  • 30g Cacao Powder
  • 50g Coconut Oil
  • 85ml Organic Pure Maple Syrup
  • 85ml Unsweetened Almond Milk
  • 1tsp Vanilla Essence
  • 1tsp Baking Powder
Gooey Brownie Bites

method:

  1. Pre-heat your oven to 180 degrees Celsius (160 fan) and line a loaf tin with baking paper.
  2. Finely grate the apples into a large mixing bowl.
  3. Stir through the plain flour, cacao powder, baking powder and vanilla extract.
  4. Melt the coconut oil and then combine with the dry ingredients in the mixing bowl.
  5. Stir through the maple syrup and almond milk and transfer the mixture to the loaf tin.
  6. Bake for 30-35 minutes until cooked through (I took mine out after 30 minutes as I love the centre to still be a bit gooey). Let it cool and then cut into 18 mini squares.
