PB&J Bliss Balls

I had such a craving for PB&J the other day and quickly whipped up a batch of these bliss balls - they are INCREDIBLE! I stored them in the freezer and they felt like such a treat - it was so hard not to over-indulge in them! If you love peanut butter and jelly then you'll LOVE these bliss balls! Plus they're gluten free, dairy free and refined sugar free too!

Pbj Bliss Balls

Ingredients:

  • 80g Ground Almonds
  • 60g Dates
  • 40g Dried Unsweetened Cranberries
  • 2-4 tbsp Water
  • 1 heaped tsp Acai Powder
  • 2 heaped tsp Raw Peanut Butter
  • 1tsp Maple Syrup
  • 1tsp Coconut Oil
  • 2tbsp Hemp Seeds
Peanut Butter Jelly Bliss Balls

method:

  1. Blend together the ground almonds, dates, dried cranberries and açai powder in a food processor until smooth.
  2. Add in 1tbsp of water at a time and blend until the mixture binds together.
  3. Divide the mixture into 10 equal pieces and roll into balls.
  4. In a small saucepan, melt the peanut butter, maple syrup and coconut oil together - this should only take a couple of minutes max.
  5. Dip the bliss balls into the peanut butter mixture and leave to set in the freezer for an hour or two. I stored mine in the freezer and just took them out 5 minutes before eating them.
  6. OPTIONAL: Once they have set in the freezer, roll them in the hemp seeds to decorate.
