I was seriously so excited when I found my first pumpkin of the season in the supermarket - it's one of my favourite things to eat and I roast at least 1 every week to add to my lunches, dinners AND...SWEET TREATS!

Pumpkin is high in beta-carotene, a powerful antioxidant that gives pumpkin its bright orange colour. It provides our bodies with a huge heap of vitamins including vitamin A AND it's packed full of fibre. Eating pumpkin can be beneficial for your skin, heart health and it's high antioxidant content can help prevent inflammation in our bodies.

Because it's naturally sweet, it's great for adding to sweet treats which is exactly why I started experimenting in the kitchen as soon as I bought my first pumpkin of the season this year. Here's my recipe for pumpkin spice freezer fudge:

Pumpkin Spice Freezer Fudge 1

Ingredients

  • 200g cooked pumpkin (Baked in the oven for 30 mins at 180'C fan)
  • 100g dates
  • 200g ground almonds (almond flour)
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnanmon

Method:

  • Blend the cooked pumpkin with the dates in a food processor until smooth.
  • Add the ground almonds and spices, then continue blending until smooth.
  • Smooth out into a freezer safe tray - I lined the tray with baking paper so it's easy to remove once chilled.
  • Place in the freezer until hard.
  • After about 30 mins, take out of the freezer and slice into small squares.
  • Place back in the freezer or in the fridge and enjoy!
