I was craving something sweet, yet nutritious and delicious the other day and came up with these gorgeous bars! These are gluten free (if using gluten free oats), refined sugar free and dairy free too. They're full of wonderful fibre, protein and healthy fats to help keep you fuller for longer which makes them a perfect breakfast bar or even snack to have on the go with you during the day.

Sticky Toffee Breakfast Bars

MAKES 12

INGREDIENTS

  • 3 ripe bananas
  • 2 eggs
  • 50g puffed rice
  • 125g oats
  • 30g ground almonds
  • 75g chopped dates
  • 1tsp cinnamon
  • 1/2tsp all spice

METHOD

  1. Pre-heat the oven to 180 degrees Celsius (160 fan assisted) and line a baking tray with grease proof paper.
  2. Mash the bananas together and mix with the eggs.
  3. Stir through the rest of the ingredients and add to the tray.
  4. Bake for 25 minutes and leave to cook before cutting into 12 bars.
