Butternut Squash Soup

My mum used to make my sisters and I butternut squash soup when we were younger. I loved coming home from school as a teenager, warming up a lovely nourishing bowl of this soup and taking it upstairs with me. It was my moment to sit and unwind before I dived into homework, went to dance class or to piano lessons. It was comforting, like a bowl of love.

That’s exactly what I needed today.

INGREDIENTS:

  • 450g Butternut Squash (raw)
  • 450g Sweet Potato (raw)
  • 1/2 cup Water
  • 1tsp Chilli Powder
  • 1tsp Garlic Powder
  • 1/2tsp Ground Ginger
  • 1/4tsp Nutmeg
  • Season with salt to taste

METHOD:

  1. Roast the butternut squash and sweet potato until soft.
  2. Blend this along with the rest of the ingredients until smooth.
