Weaning Friendly Chickpea Patties

I love creating baby weaning recipes that are meals in their own right because I know that Koa is getting all the nutrients he needs in one mouthful!

Chickpeas are a wonderful source of protein & fibre and these patties are full of vitamins, minerals and essential nutrients. The flaxseed provides healthy fats and you can't go wrong with baby spinach! Such an easy way to get added greens into your little ones food without much flavour. The vitamin C in the lemon juice will also help the absorption of iron from the spinach, adding flavour at the same time! Most importantly, they're also full of flavour. I honestly love eating these myself so I hope you and your little ones enjoy these as much as we do!

MAKES 8

Ingredients:

  • 390g Tinned Chickpeas
  • Juice of 1 Lemon
  • 1 Large Handful of Baby Spinach
  • 2 tbsp Plain Flour
  • 1 tbsp Flaxseed
  • 1 tsp Garlic Powder

method:

  1. Drain and rinse the chickpeas. Blend them with the lemon juice and spinach in a food processor until smooth.
  2. Stir through the flaxseed, flour and garlic powder and then divide the mixture into 8.
  3. Roll the mixture into small balls and flatten slightly to create the patties.
  4. Fry them in a non-stick pan for around 5 minutes on each side until golden brown and cooked through.
